Simple Salad with Mango Cilantro Dressing
I know I haven't been around much lately. I've had a lot of change occurring in my family, which has all been positive, but has given me a little bit of writer's block. I've been making great food, but forgetting to take pictures of it. I've been gardening, but usually right at dusk and in a hurry. Between work, the family, and responsibilities that come with owning a home, I've just been tired. I hope to get back to my weekly blogging schedule now that things are settling back down.
Today, I bring you a simple salad recipe that anyone can make in a hurry. (Most of my recipes are made in a hurry, in case you haven't noticed. It's just par for he course when you're a working mom.). I enjoyed this salad last night with some roasted potatoes and marinated raw portobello mushrooms. It was crisp, light, and tasted like summer... Perfect for a hot August evening.
Simple Salad with Mango Cilantro Dressing
Salad:
1 head romaine
1 green apple, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1/2 avocado, diced
Dressing:
1 ripe mango, peeled, cored, and roughly chopped
1/4 cup fresh cilantro
1 lime, juiced
1/4 tsp sea salt (I used Hawaiian Black Sea salt, which has a very neat flavor. You can almost taste the sea, but without the fishiness.)
Add the salad ingredients to a bowl and toss. Add the dressing ingredients to a blender or food processor and blend until smooth, adding a little water to thin to your preference. Dress your salad, and enjoy! I love how quick and easy this dressing was. The cilantro brings an anazing brightness which pairs wonderfully with the sweetness of the mango and tang of the lime. I think I'll be making this one more often.
